Lemon cake--the snack that exemplifies just how THRILLED you are that the warm weather is finally here...

| Set the oven temp to 160 degrees Celsius (if you don't know the metric system, that's a problem. Just kidding! Use an online converter.) |
| Grab three eggs |
| and a cup--I like to use our eldest son's cup for cake measuring |
| combine three eggs and one cup of sugar |
| mix until |
| thick and fluffy |
| in a separate bowl put 1 1/2 cup of flour |
| a package of yeast |
| 1/2 a cup of rice milk |
| 1/2 a cup of olive oil |
| mix and add in other ingredients |
| grab cheese grater and a lemon (This one's from the Amalfi coast--fancy, I know!) |
| Grate grate grate your little heart out |
| Grab some oven paper and line your cake pan to keep the batter from sticking to it. |
| Bake for 45-50 minutes at 160 degrees Celsius |
| Pop it out of the oven when its' ready |
| and sprinkle with what I like to call "Texas Snow" - aka- powdered sugar |
