The English Schoolhouse Recipes: Lemon Cake

Cook like an Italian, speak like an American-
Lemon cake--the snack that exemplifies just how THRILLED you are that the warm weather is finally here...
you ready?

Set the oven temp to 160 degrees Celsius (if you don't know the metric system, that's a problem. Just kidding!
Use an online converter.)

Grab three eggs

and a cup--I like to use our eldest son's cup for cake measuring

combine three eggs and one cup of sugar

mix until 

thick and fluffy

in a separate bowl put 1 1/2 cup of flour
a package of yeast

1/2 a cup of rice milk

1/2 a cup of olive oil

mix and add in other ingredients

grab cheese grater and a lemon (This one's from the Amalfi coast--fancy, I know!)

Grate grate grate your little heart out

Grab some oven paper and line your cake pan to keep the batter from sticking to it.

Bake for 45-50 minutes at 160 degrees Celsius

Pop it out of the oven when its' ready

and sprinkle with what I like to call "Texas Snow" - aka- powdered sugar
